Prawn Avocado Salad

I am inspired to recreate a salad dish that I had at a Thai restaurant in Melbourne last year. I remember it was extremely delicious with the right balance of sweetness, saltiness and spiciness in the salad dressing. The mixture of green salad was fresh and crunchy, the mashed avocado was creamy and the grilled prawns were crunchy and yet moist on the inside.

Ingredients

  • A dozen of fresh prawns
  • One fresh avocado
  • Mix fresh salad greens
  • 1 fresh red chilli
  • 1 fresh lime
  • 2-3 tablespoons fish sauce
  • 2-3 tablespoons white vinegar
  • 1 tablespoon sugar
  • 2 cloves garlic
  • 1 stalk lemongrass
  • 1 kaffir lime leaf

Cooking

  • First prepare the salad dressing
    • Chop the garlic finely (leave some to fry with the prawns)
    • Chop the lemongrass finely
    • Chop the lime leaves finely
    • Chop the red chilli finely
    • Mix all the ingredients in a bowl with the fish sauce, vinegar, sugar and lime juice

  • Remove the head, shell and devein the fresh prawns

  • Remove the dark layer skin and seed of avocado and cut into dice pieces
  • Heat a frying pan with some butter and olive oil. Once the pan is hot, toss in the chopped garlic
  • Fry the garlic until fragrant. Then add the prawns. Fry until prawns are cooked. Remove the prawns and set aside

  • Plate the green salad with the avocado in the middle. Place the prawns on top of the avocado. Then pour the dressing over the top

I am delighted to say that my version of the prawn avocado salad is as tasty as the restaurant and has all the elements of a saltiness, sweetness and spiciness in the dressing. The avocado was firm and creamy. The prawns crunchy and yet juicy and tender on the inside. The mixed green salad was fresh and crunchy.

The total preparation and cooking time is approximately 30 minutes. Overall a great and healthy dish and simple to make at home.
