Victor is passionate about Penang food and learned how to cook traditional Malaysian Nyonya (also known as Peranakan) style food from an early age. Growing up in the early 1960s in a pre-war terrace house in George Town, Victor would spend time with his mother in their home kitchen as she prepared Penang’s signature dishes using a traditional mortar and pestle for pounding homemade spice paste and a charcoal flame stove for cooking. Traditional Nyonya cuisine is a fusion of Chinese, Malay and Indian cooking styles and is an integral part of Penang culture.
Prior to returning to his home town of Penang, Victor established and operated his own Nyonya restaurant “Melaka” in the beautiful picturesque township of Franklin in the Huon Valley, Tasmania. During this time, Melaka was featured in The Good Weekend, Qantas Magazine and won the Taste of the Huon in 2007. His skills in the kitchen were highly praised by Australian restaurant critics Sue Dyson and Roger McShane during their Food Lovers Guide to Tasmania show on ABC Radio.

Today, Victor enjoys sharing his homestyle cooking enthusiasm with others who are passionate about food or who simply want to enjoy cooking (and eating!) a tasty meal of traditional Malaysian food in a relaxed and fun environment. At Victor’s cooking class it’s all about having fun while you learn how to cook some tasty new dishes you may not otherwise have encountered with some new friends. The course will cover a selection of simple to medium-complex dishes and include take-home recipes so you can recreate the same meal again when you get home.

Each class begins with a visit to a traditional fresh produce or ‘wet’ market at Tanjung Bungah where we will meet local traders selling their wares of exotic fruit, spices, freshly caught seafood and other fresh produce. Together, we’ll enjoy refreshments and a traditional Penang style breakfast before heading back to our kitchen at Batu Ferringhi to prepare and enjoy a delicious meal of homestyle food. You can expect to learn how to cook three dishes in the class.
